Eggs—They’re Back!

One of the confusing issues about nutrition is how foods bounce back and forth between the ‘good’ foods and ‘bad’ foods list.  One example is eggs.  While it is true that egg yolks do contain cholesterol, eggs have rejoined the list of ‘good’ foods.  Eggs are very high in protein, economical, can be eaten a variety of ways—and they are delicious. 

Most people can eat about 5-7 eggs per week.  If you are concerned about cholesterol, omelets can be made from one egg and two additional whites, without sacrificing taste or nutrition. (Give the yolks to your pets for a smooth, shiny coat.)

Eggs can be cooked a variety of ways, and they are great at ‘binding’ the vegetables in a quiche or a simple meat loaf.  Try making a meat loaf with ½ lean ground beef and ½ ground turkey, bread crumbs, an egg and spices.  Lots of great taste, plenty of protein, and low in fat.  I also suggest boiling several eggs at once and keeping them in the fridge for quick, healthy snacks.  Raw eggs should be avoided, due to potential for salmonella virus.

With 6 grams of protein and a cost of about 20 cents each, it’s time to put eggs back in your diet.

I sincerely wish to thank the people of St. Philip's for their generosity in providing a home for a family that is currently in living in the streets of Haiti. As we all are aware, the situation in Haiti is extremely dangerous. By providing safe shelter, one more family now has at least one major worry off their minds and are now safe from predators - both human and animal. This one act of generosity is truly life changing, as the parents may now take a major burden off their shoulders and move on toward improving another major aspect of their life—for both themselves and their children.

Like candles, people can illuminate the world with love, charity and mercy. Sometimes we feel that one person cannot make a difference in this world of billions of people and with such great need, but, as you all have clearly demonstrated, that is not true. When we join together in collective Christian Charity, we can enlighten the whole world. We start by helping one child - one family at a time and then watch the ripple spread across the country.

for Haiti House Fundraising Success

In these countries things sometimes move very slowly, and in Haiti particularly (because of where they are in their journey as a country), things do take a bit of time. I have put in the fulfillment request for this house and our projects department is beginning to work on it. I will stay on top of it for you all and will send you updates to the progress as I receive them.

Again, please thank the generous people of St. Philip’s for all that they do to help those who are unable to help themselves - you will never know the impact that this one gift will have on not only this one family, but on the country in general. I can assure you that this gift will alter both the lives of the children and the parents of this family in a positive way, which in turn will alter the country - one person / one family at a time as they grow to help others.

June Concerts

Santa Cruz City Band

Sunday, June 4, 5-6 pm, The Attic, 931 Pacific Ave, Santa Cruz.  Admission is free.

This enthusiastic and talented community band, directed by tuba virtuoso John Thomas, will play concert band standards by Kabalevsky and Hindemith, circus marches, and a composition based on Robert Burns' "Tam O'Shanter" by Malcolm Arnold.  The concert is great for children, with an up-close instrument "petting zoo" after the concert.  The band is open to anyone that plays a band instrument and is proficient at reading music. The group meets Mondays from 7:30-9:30 pm in the Santa Cruz High Band Room on the corner of Walnut and California. William Coulter & David Brewer:
A Concert for the Summer Solstice

Friday, June 16, 7:00 pm, The Attic, 931 Pacific Ave, Santa Cruz. Tickets $10 at the door or in advance at Westside Stories bookstore next to Safeway on Mission.

Grammy-award winning guitarist William Coulter and piper/tin whistle player/composer David Brewer present an evening of traditional and newly composed Celtic music. William and David are known internationally for their phenomenal musicianship and a talent for re-inventing Celtic music without diluting it, somehow retaining the rich and raw heart of a musical lineage that is both haunting and joyful at the same time. David and William will be performing music from their latest albums as well as some new surprises.
